How to alter these document converters to support Office 2007 document conversion?

Since these converters are using Excel and Word 2007 on the server to convert Office 2003 documents, it is easy to convert these converters to work with .docx and .xlsx files.

The Elements.xml file contains the association between the file extension, (.xls) in this case, and the converter.

All you need to do is change this element "From=xls" to "From=xlsx". However, if you want to use this solution for BOTH "From=xls" to "From=xlsx" you may have a problem. It seems like Elements.xml shoudl be able to associate this converter with more than one file-type extension, but I believe that is not the case. The App="Excel2PDF.exe" does not care if the file is .xls or .xlsx.
If you can figure out a way to get one converter handling both file types - without duplicating and renaming the executable - please share! Two feature definitions pointing at the same executable might do it.
